Measurements#
I live in the United States and cook with imperial tools, but I’ve found metric grams far more effective than cups, ounces, and pounds. A kitchen scale makes measuring fast, accurate, and reproducible. Some imperial measurements remain (for example, “one 15-ounce can”) because they simplify shopping for prepackaged goods sold in the US.

A Tajine is a versatile clay pot with a conical lid which lends itself to slow cooked, flavor infused foods. The process in preping and cooking a dish is typically the same across most recipes:
Brown meats in a skillet (or in the tajine if it’s compatible with your stove top) Cook root and other hearty vegetables. Add spices (like, Moroccan Seasoning). Layer the meats and spiced veggies into the tajine. Add cooking liquid. Cover and place into a cold oven. Cool at about 350°F for about 1.5 to 2 hours. Server with couscous, rice, quinoa, or other similar grain. Pre-soak To make the best use of a tajine pot, pre-soak the base and lid, submerged in water, for at least one hour before use.

The go-to recipe for chocolate chip cookies. Browning (rather than simply melting) the butter adds an extra dimension and is completely optional.

Mom’s original recipe! This is a flexible recipe which can exchange mashed bananas for pureed pumpkin. One may find it useful to reduce the sugar to 1 cup or less. Applesauce could be substituted for vegetable oil.

This recipe is perfect for a cold winter night. The warm spices of south France and Spain combine to flavor this slow cooking dish. If you don’t have any spices from a Provençal market, my Moroccan Seasoning recipe is a very solid stand-in.
This recipe contains no definite quantities; use it as a basic map and improvise (as I did) to create your own version of this delicious dish.
Special Equipment Large, heavy bottom stew pot Ingredients Chicken thighs; bone in, skin removed Dried apricots White mushrooms Onion Peppers Potatoes Moroccan Seasoning Salt to taste Chicken (or other) stock Cous-Cous Brown sugar Preparation Chop vegetables, add to pot. Add chicken thighs. Add apricots. Fill with enough stock and/or water to cover. Add Moroccan Seasoning. Simmer for two or so hours, till chicken is cooked and vegetables are soft. Taste Additions of salt, seasoning, and sugar should be done in moderation and slowly. Add, stir, taste, let simmer, taste again… add more of whatever as needed. Repeat.
