Butter a 9” cake pan and line the bottom with parchment paper. Prepare the apples: Peel, core, and thinly slice the apples. Toss with lemon juice. Make the caramel: In a medium saucepan, melt butter over medium-low heat. Stir in honey and sugar until the mixture turns light brown. Remove from heat, and stir in vanilla and salt. Pour the caramel into the cake pan. Arrange apple slices on top of the caramel. Make the cake: In a medium bowl, whisk together the dry ingredients. In another bowl, cream together butter, honey, and sugar. Add eggs one at a time, then gradually mix in the dry ingredients. Spoon the batter over the apples, spreading it evenly to the edges of the pan. Bake for 30 minutes. If the center still wiggles, reduce the heat to 325°F and bake for an additional 5 to 10 minutes. Banana Bread

This recipe comes from Popote et Potager, BANANA BREAD Recette facile et anti gaspi. The bread (or cake, depending on your definition) is sweetened only by the bananas and chocolate. The recipe yields a dense, moist bread packed with banana flavor. Yield 1 loaf Special Equipment 1 1.5 to 1 pound loaf pan Preheat Oven Preheat oven to 350°F or 180°c. Adjust oven rack to middle position. Ingredients 5 ripe to slightly over-ripe bananas, peeled. 4 mashed 1 whole, sliced length-wise 2 large eggs 200 grams all-purpose flour 1 packet (7 grams) active dry yeast 100 grams dark chocolate (70%), finely chopped Preparation Butter/flour (I use Baker’s Joy) loaf pan and line the bottom of the loaf pan with parchment paper. In a medium sized bowl, mash 4 of the bananas. Add the two eggs to the mashed bananas and mix well using a whisk. Combine the flour and dry yeast. Sift into the bowl atop the banana/egg mixture. Beat well using a sturdy whisk or heavy mixing spoon. Add the finely chopped chocolate and mix well. Pour the batter into the prepared loaf pan. With the two halfs of the remaining sliced banana, arrange the two halfs, cut-side up, atop the batter. Gently press the banana slices into the batter till set and even. Bake Bake 45 minutes. My sister Rachael and I baked this pound cake during her March 2nd, 2011 weekend visit. We served individual sliced topped with mashed fresh strawberries and topped with freshly whipped cream. Italian Flourless Chocolate Cake

Butter an 8-inch cake pan. Line bottom with parchment. In a large bowl, using a mixer or by hand, beat the butter with the confectioners’ sugar until smooth and creamy. This cake is a composite of a few different recipes, modified to yield a small, two serving cake. A variety of fruits or berries can be used to top the mascarpone creme filling. Cherry Pineapple Dump Cake

This is an old “easy recipe” which is deliciously deadly. Eat with care. The “Cherry Pineapple” rendition is just one way this cake can be prepared; the basic recipe can be altered to use any flavor of cake mix with any variety of canned fruits. Special Equipment 9x13" Cake Pan Preheat Oven Preheat oven to 350°F. Ingredients 1 can cherry pie filling 1 can crush pineapple, in natural juice ½ cup chilled butter, cut into half tablespoon pieces 1 packaged yellow cake mix Preparation Grease a 9x13" cake pan. Dump cherry pie filling into cake pan. Dump crushed pineapple (including juice) into cake pan. Stir to combine cherries and pineapples; spread evenly. Dump yellow cake mix atop fruits; spread evenly. This is the final product of many, many test cheesecakes. Special Equipment 10" Spring-form Pan Preheat Oven Preheat to 325°F Ingredients 1 ¼ cups Graham Cracker Crumbs 1 tablespoon Sugar 3 tablespoons Butter, melted 1/3 cup Heavy Cream 2 pounds Cream Cheese, room temperature 1 1/3 cups Sugar 4 Eggs 2 tablespoons All Purpose Flour 2 tablespoons Lemon Zest Preparation Crust Melt butter in a bowl. Combine and add to butter Graham cracker crumbs 1 tablespoon sugar Press mixture into a 10" spring-form pan. Bake for 8 minutes, then cool. Increase oven temperature to 400°F. Filling Beat cream cheese and sugar till smooth. Add eggs, one at a time, beating after each addition until smooth. Add the remaining ingredients, wisk until smooth.
